Who We Are
Wild Grains Bakery is a Grain to Table bakery located in Bangkok in Ekamai, Sukhumvit 63. Available by delivery (click to see delivery menu) and dine-in (coming soon!)
Using a variety of heritage, ancient and wild grains, we have tested and refined our sprouting, milling and sifting process to bring the flavor of the grain to the forefront.
Grains are identity preserved, single origin and 100% traceable. They are Stone Milled on site batch to batch and stored in a temperature-controlled environment to preserve flavor and freshness.
Our breads, pastries and cakes uses freshly milled flour which means nothing taken out and nothing is added in. Bread is naturally leavened (and yes, some with a small amount of yeast) with a slow fermentation process that is 24 up 36hours. Combined with the best ingredients that we can source directly, and our love of food, we bring the best we can to the table.
Everything is made by hand, and everything is ‘from scratch’ made in house. We take inspiration from all parts of the world combining the best of tried and true techniques to create unique and signature flavors.
Naturally fermented with live cultures from wild grains, Our cheeses are carefully cultured and aged. Available in a variety of Creamed, Semi Soft, Firm and Mold Cheeses, made to order via the website, and available in the Deli Fridge when you stop by.
Cakes and desserts are refined sugar free, lightly sweetened naturally with Maple Syrup or Coconut Sugar. Carefully developed and refined, our desserts are a mindful treat that one can enjoy.
Those with sensitivity to gluten will be pleased to find that our selection of breads, pastries, desserts and cheeses are also available Gluten Free. The same principles apply here, freshly milled gluten free flour, combined with slow fermentation, shaped and baked on the day served.
